Ilona Gyöngyösi

Confectionary Gyöngyössy

I graduated in the College of Foreign Trade in 1979, and then I worked for Foreign Trade Co. Videoton for two years.

In 1981 my husband was sent to one of the West-African countries to do diplomatic work. The Ministry of Foreign Affairs – since I speak French and Russian – offered me economic and secretarial work that I accepted with great pleasure.

A highly varied and hard five years followed. The backwardness of the country’s infrastructure, the completely different lifestyle and culture taught me to think differently, to solve difficult tasks. I learned that not one but a lot of formulas had to be developed and experiencing two coups I realized that anything could happen which is described in the books.

During the five years I made friends and acquaintances from many different nationalities with different behavioural, cultural and eating habits. We spent a lot of evenings together having fun where common cooking-baking had a very big role.

After our return to Hungary, I worked for Videoton again then after the birth of our two sons I worked for the Hungarian Embassy in Ulan Bator for a year.

After returning home, I moved to Nyíregyháza with my two sons and started my life as a working woman raising her children alone.

Very soon, an American personnel consultant firm contacted me because a French company was looking for network developers to expand their company in Hungary.

The work was unique, fantastic in the 90s in Hungary. Independent, creative, hard, mobile, all a man/woman in his/her 30s could ask for.

I worked here for 15 years, but it was also over because the shareholders’ strategy changed and they did not want to build more stores in Hungary. Here I learned to prepare the market study, to explore where and in what areas what activities you should install, how to prepare the technical management, to prepare a business plan, to track the turnover and most importantly, to feel responsibility for the project later many years after its realization.

In 2006 seeing the drastic slowdown in development I began to think about how to continue:

1/ to send my professional resume to some companies or

2/ to found an independent activity.

I have always been attracted to the confectionery industry. In addition, my father has had an organic farm for about 15 years from where the majority of the chemical-free fruits, nuts, peanut etc. I can easily obtain, so I voted for the independent activity.

First, I decided the following:

1/ Cakes are made from only very high-quality ingredients, with traditional technology without additives, dyes or substitutes.

2/ The largest possible number of chemical-free (bio) ingredients have to be used.

3/ To colour the offer with own recipes as well as with other nations’ recipes.

-          First, I completed a manager and pastry course.

-          Then I looked for a place where I could open the plant and the first pastry shop, too. (in an industrial area but within the city, with high passing through traffic and large parking lot).

-          I prepared my business plan (thanks for the 15 years it did not cause a big problem).

-          I had to get capital that I could achieve only at very high risk, in other words my only property is mortgaged.

-          I read all the laws, rules in connection with the realization of a confectionery, I consulted with everyone from whom I could learn, I had the building planned, and I invited tenders for the implementation.

-          I started the construction and on 13 June 2008 we opened the confectionery and the pastry shop at the same place, too.

So far everything went smoothly.

In 2009, however, like many other entrepreneurs, I also got into a difficult position because of my bank.

We had spent long months in negotiations before we managed to make an agreement that made my financial burden very high and forced me to look for such business solutions which increase my customer number faster along with the turnover too.

It seems that we were successful.

This is also due to the confectioner and sales team working here.

The aim in 2011 is:

-          To create a wide range of confectionery for diabetics and dieters where cakes made only with xylitol are sold.
